Winter vegetable and lentil soup

Simple, but nice soup. Great for a winter lunch.

Ingredients

  • 100 g dried red lentils
  • 2 carrots quartered lengthwise, diced
  • 3 sticks celery sliced
  • 2 small leeks sliced
  • 2 tbsp tomato puree
  • 1 tbsp fresh thyme leaves
  • 2 cloves garlic finely chopped
  • 1 cube veggie or chicken stock
  • 1 tsp ground coriander
  • 2 tsp fresh ginger finely chopped, optional
  • fresh koriander chopped, optional

Instructions

  • Add all the ingredients to a large pan. Add 1.5 litres of boiling water. Stir well.
  • Cover and simmer for 30 minutes, until the lentils and vegetables are tender.
  • Serve as-is, or blend to a constistency you like.
  • Serve with fresh koriander, and some naan or sourdough bread
