Winter vegetable and lentil soup
Simple, but nice soup. Great for a winter lunch.
Servings: 6
Ingredients
- 100 g dried red lentils
- 2 carrots quartered lengthwise, diced
- 3 sticks celery sliced
- 2 small leeks sliced
- 2 tbsp tomato puree
- 1 tbsp fresh thyme leaves
- 2 cloves garlic finely chopped
- 1 cube veggie or chicken stock
- 1 tsp ground coriander
- 2 tsp fresh ginger finely chopped, optional
- fresh koriander chopped, optional
Instructions
- Add all the ingredients to a large pan. Add 1.5 litres of boiling water. Stir well.
- Cover and simmer for 30 minutes, until the lentils and vegetables are tender.
- Serve as-is, or blend to a constistency you like.
- Serve with fresh koriander, and some naan or sourdough bread
