Potato salad
Nice salad with lots of fresh ingredients
Servings: 6
Ingredients
- 750 gram potatoes
- 1 green appel
- 2 spring onions thinly sliced
- 3 tbsp mayonaise
- 3 tbsp sour cream
- 1 tsp lemon juice
- parsley finely chopped
- chives finely chopped
Instructions
- Peel the potatoes, or if you like: wash them thoroughly if the skin is eatable. Cut them into cubes. Boil the potatoes until the start to get soft. Be careful not to over cook.
- In the meanwhile, cut the other ingredients
- Mix everything, except the potatoes and some of the parsley and chives, in a bowl.
- Cool the potatoes: if you have time, let them sit, otherwise put the pan in a sink with cold water.
- Add the cooled potatoes to the bowl and mix carefully. Sprinkle over the remaining chives and parsley.
