Potato salad
Nice salad with lots of fresh ingredients

- 750 gram potatoes
- 1 green appel
- 2 spring onions thinly sliced
- 3 tbsp mayonaise
- 3 tbsp sour cream
- 1 tsp lemon juice
- parsley finely chopped
- chives finely chopped
Peel the potatoes, or if you like: wash them thoroughly if the skin is eatable. Cut them into cubes. Boil the potatoes until the start to get soft. Be careful not to over cook.
In the meanwhile, cut the other ingredients
Mix everything, except the potatoes and some of the parsley and chives, in a bowl.
Cool the potatoes: if you have time, let them sit, otherwise put the pan in a sink with cold water.
Add the cooled potatoes to the bowl and mix carefully. Sprinkle over the remaining chives and parsley.
