Potato salad

Nice salad with lots of fresh ingredients

Ingredients

  • 750 gram potatoes
  • 1 green appel
  • 2 spring onions thinly sliced
  • 3 tbsp mayonaise
  • 3 tbsp sour cream
  • 1 tsp lemon juice
  • parsley finely chopped
  • chives finely chopped

Instructions

  • Peel the potatoes, or if you like: wash them thoroughly if the skin is eatable. Cut them into cubes. Boil the potatoes until the start to get soft. Be careful not to over cook.
  • In the meanwhile, cut the other ingredients
  • Mix everything, except the potatoes and some of the parsley and chives, in a bowl.
  • Cool the potatoes: if you have time, let them sit, otherwise put the pan in a sink with cold water.
  • Add the cooled potatoes to the bowl and mix carefully. Sprinkle over the remaining chives and parsley.
